HCG Phase 3 Recipe – 60 Second Coconut Muffin

Muffin 1  These muffins are so easy to make and great for eating in P3 if you are craving something bread like and can tolerate coconut flour and flax-seed. Simple and easy, just how I like it.

60 second Coconut muffin:

Ingredients –

½ Tablespoon butter or Coconut Oil
2 Tablespoon Ground Flax Seeds
1 Tablespoon Coconut Flour
½ Teaspoon Gluten-Aluminum Free baking Powder
1 Egg

Method:

1. Melt butter
2. Whisk egg then drizzle in melted butter
3. Add in the coconut flour and flax-seed, mix until combined
4. Sprinkle in baking powder and mix
5. Spoon into a ramekin and microwave for 1 minute, depending on microwave you might have to cook little less or more.
6. Cool, remove and eat!

Muffin 2

Careful not to over-cook as it can go very dry very quick with Coconut flour! These can also be cooked in oven at 175°c for about 15 minutes but don’t turn out as nice, really dense.
